These are examples of recipes you can enjoy while staying at our Pennsylvania bed and breakfast and again when you return home.


Baked German Pancake

Pancake Batter
  • 3/4 cup self-rising flour
  • 6 eggs
  • 1 cup milk
  • 1/4 teaspoon salt

Apple mixture

  • 4 large apples, peeled and cut into slices
  • 1/4 cup butter

Topping

  • 1 cup brown sugar
  • 2 tablespoons cinnamon

Preheat oven to 350 degrees.  Spray lightly a 9x13" pan with nonstick spray. Place the butter into the pan and put into the oven to melt.  After butter is melted, remove pan and sprinkle apples into the dish.  Place pan into the oven and bake for 20 minutes.  While the apples are baking, combine flour, eggs, milk and salt in a large bowl.  Mix until smooth.  When the apples are finished baking, pour batter slowly over the top.  Combine cinnamon and brown sugar and sprinkle over the batter.  Bake for 30 minutes.  Slice into 6 or 8 pieces and sprinkle with powdered sugar just before serving. 


Linda's Healthy Muffins

  • 1/2 teaspoon salt
  • 2 & 1/4 cups flour
  • 1 & 1/4 cups sugar
  • 1 tablespoon cinnamon
  • 2 teaspoons soda
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1/2 cup grated carrots
  • 1 apple cored & shredded
  • 1 8oz crushed pineapple
  • 3 eggs
  • 1 cup vegetable oil or applesauce
  • 1 & 1/2 teaspoons vanilla

Preheat oven to 350 degrees, combine and shift together salt, flour, sugar, cinnamon and soda.  Add pecans, coconut, carrots, apple, and pineapple.  Whisk together eggs, oil or applesauce, and vanilla.  Blend with flour mixture.  Pour into greased muffin tins 2/3 full or 2 loaf pans.  Bake 25 - 35 minutes.  Cool 10 minutes.  Remove from pan and enjoy!  


Coconut Oatmeal Cookies

  • 1 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 cup unsweetened coconut
  • 1 cup flour
  • 2 cups rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon coconut extract
  • Salt to taste
In a large mixing bowl, beat together the butter, sugars and egg. Add the remaining ingredients. Form batter into balls and place on parchment paper on a cookie sheet. Press down with a floured fork. Bake in a 350 degree oven for 10 to 12 minutes or until golden brown. Cool on a cookie sheet for 10 minutes before removing.
